Shahi channa pulao

SHAHI CHANA PULAO                (شاہی چنا پلائو) is a unique recipe of rice and a good addition to your main course menu. It is a very simple recipe but very much tasty as well. Let us have a look of its making/preparation or cooking in MHK’s own style. We are going to cook it in easy and quick way to add an interesting main course meal dish:

Ingredients:

Saila Rice (چاول): 3 Kg

Boiled Chick Peas (سفید ابلے ہوئے چنے): 1 Kg

Chicken (مرغی): 1.5 Kg (Boiled and Shredded)

Stock (یخنی) of Chicken & Chick Peas: 1.5 Liters

Onion (پیاز): 5X Large Size Fine cut

Oil (تیل): 2.5 Cup

Garlic (لہسن): 2X (Fine Cut)

Star Anise (بادیان): 2X

Cinnamon (دار چینی) : 3~4 Sticks

Black Cardamom (موٹی الائچی) : 2~3X

Green Cardamom (سبز الائچی) : 6~7X

Black Pepper (کالی مرچ) : 1 Table Spoon

Clove (لونگ) : 8~10X

Whole Cumin (سفید زیرہ): 1 Table Spoon

Black Cumin (کالا زیرہ): 1 Table Spoon

Bay Leaves (تیز پات): 3X (mashed)

Salt (نمک): 5 Table Spoon (or as per taste)

Chili Flakes (دڑا مرچ): 3 Table Spoon

Coriander (دھنیا) Powder: 3 Table Spoon

Tomato (ٹماٹر) + Green Chili (ہری مرچ) Paste: 3X + 4~5X

Raisins (کشمش): 1 Cup (Properly washed)

Dry Dates (چھوہارے): 30X (Cut in length) (Soaked in Hot Water)

Procedure:

1. Pour Oil and add onion, fry till it become light golden.

2. Add garlic and fry again till its aroma is felt.

3. Add whole spices and fry further till their smell is aroused.

4. Add powder spices along with a splash of water, fry further for 5 minutes.

5. Now add tomato and green chili, mix well and steam cook for 2~3 minutes.

6. Remove the lid, mix a little and again add little amount of water.

7. When tomatoes are tendered add chick Pease, mix them well & fry.

8. Add stock and water, mix a little cover with lid and cook on high flame.

9. In parallel add raisins & dry dates in hot oil, fry a little on low to medium flame.

10. When raisins are swelled add shredded chicken and fry a little as well.

11. After 3~4 minutes when colour of chicken is changed, off the flame.

12. Now add rice in boiling mixture mix well & check for salt also.

13. When water is dried add already fried raisins, dry dates & chicken.

14. Spread it on the rice, steam cook High flame-5 minutes, Low Flame-10 minutes.

15. In last remove the lid and dish out accordingly.
