Mutton paya

 

Mutton Paya (مٹن پائے) is a traditional, healthy & energetic main course meal recipe. It is very popular in winter season. However peoples of sub-continent all around the world like it very much. Here #MHK is going to demonstrate its procedure in such a manner that everyone could prepare it easily at home. Now let’s see what the required ingredients are and how to make this simple, easy, quick and delicious/tasty recipe in our kitchen at home.

Ingredients:

*****To Make Stock of the Paya*****

1. Mutton Paya (چھوٹے پائے): 8X

2. Garlic (لہسن): 1X

3. Salt (نمک): 1 Table Spoon

4. Turmeric (ہلدی) : 1 Tea Spoon

5. Cinnamon Sticks (دار چینی): 3~4X

6. Clove (لونگ): 4~5X

7. Black Cardamom (موٹی الائچی): 2X

8. Green Cardamom (سبز الائچی): 3~4X

*****To Make Gravy*****

Oil (تیل): 1/2 Cup

Onion (پیاز): 3X (large size) Fine cut

Garlic+Ginger Paste (لہسن ادرک پیسٹ): 3 Table Spoons

Coriander Powder (دھنیا): 2 Table Spoons

Turmeric Powder (ہلدی): 1/2 Tea Spoon

All Purpose Flour (میدہ): 3 Table Spoons

Mix Spice Powder (گرم مصالحہ): 1 Tea Spoon

Dry Fenugreek (قصوری میتھی): 2 Table Spoon

Procedure:

1. Cut paya into small pieces and wash properly.

2. Pour water in cooking pot with paya and let it boil well on high flame.

3. When starts boiling, turn flame to medium & remove foam of surface.

4. Add spices, mix well, semi covered with lid & let it cook for 3~4 hours on medium flame.

5. After 4~5 hours, paya are tendered well & stock become sticky.

6. Pour oil in cooking pot, add onion, fry on high flame till become translucent.

7. Now turn the flame to medium & when become brown take it out.

8. In the same remaining oil add ginger & garlic paste, fry till its smell is felt.

9. Add spices and fry a little while stirring continuously.

10. Fry further by adding a spoon of paya stock till smell of spices is felt.

11. Now add only paya in this gravy and mix well.

12. Add fried onion, mashed in hands and cook further for 10~15 minutes almost.

13. Now pour stock of paya, semi cover with lid & let it boil on high flame.

14. When starts boiling add cake flour mixture, stir continuously for again boil.

15. Gravy become stick, means it is ready.

16. Sprinkle mix spice powder & dry fenugreek cover with lid for a while.

17. In last dish it out with some Julian cut ginger etc.

 

 

Tip-1: It can also be cooked in pressure cooker.

Tip-2: Use of spices is helpful to reduce the bad odor of paya.
