Mix vegetable

 

Mix vegetable recipe is an energetic recipe as it includes the all benefits of different included vegetables. Let us have a look of its making/preparation or cooking in MHK’s own style. We are going to make it in simple, easy and quick way to add an interesting main course meal dish:

Ingredients:

Oil (تیل): 1/2 Cup

Onion (پیاز): 2X (Medium Size & Roughly Chopped)

Salt (نمک): 1 Tea Spoon (or as per taste)

Coriander Powder (دحنیا): 1 Tea Spoon

Turmeric Powder (ہلدی): 1/2 Tea Spoon

Red Chili Powder (سرخ مرچ): 1 Tea Spoon

Chili Flakes (کٹی ہوئی لال مرچ): 1 Tea Spoon

Black Seeds (کلونجی): 1/4 Tea Spoon

Tomato (ٹماٹر): 2X (Medium size & fine Cut)

Potatoes (آلو): 3X (Medium Size & Cut in Cubes)

Carrots (گاجر): 3X (Medium Size & Cut in small Cubes)

Peas (مٹر): 1 Cup

Ginger (ادرک) Grated: 1 Table Spoon

Green Chili: 3X (Cut in Length) & 2X (Fine cut)

 

Procedure:

Step-1: Place cooking pot on medium flame, pour oil in it & when oil become hot pour onion as well and fry till it gets soft & light golden.

 

Step-2: Add spices and stir a while then splash water a little and fry till smell of spices is felt.

 

Step-3: Now add tomatoes, stir a little and steam cook for 2~3 minutes so that they could tender.

 

Step-4: After cooking of 5 minutes (almost) all the ingredients are blended, water is dried and oil is visible at the edges of the gravy. At this stage add cauliflower and further cook on medium flame.

 

Step-5: Add hard vegetables at this stage, mix well, and add little amount of water and then steam cook for 5 minutes so that all these could become soft.

 

Step-6: After 5~8 minutes remove the lid, stir a while and when added vegetables are tendered proceed further.

 

Step-7: Now add cabbage and mix well and further cook until a little amount of water is left in the gravy.

 

Step-8: Add grated ginger & green chilies, mix thoroughly and further steam cook for 8~10 minutes at low flame. 

 

Step-9: Mix vegetable is almost ready now, in last sprinkle little amount of green coriander, off the flame and cover with lid for a while.
