Gajar ki phirni

 

It is a delicious dessert recipe made with carrot and rice. Let us have a look of its making/preparation or cooking in MHK’s own style. We are going to make it in simple, easy and quick way to add an interesting main course meal dish:

Ingredients:

Milk (دودھ): 1.5 Liter (Full Fat)

Rice (چاول): 1/2 Cup (Soaked in water for Half an Hour)

Carrot (گاجر): 2X (Medium Size & Grated)

Sugar (چینی): 250 Grams (1 Cup or as per taste)

Green Cardamom (سبز الائچی): 5~6X

Coconut (کھوپرا): 1/2 Piece (Soaked in hot water for 10 minutes to make soft)

Eggs (بالائی): 3X

Almond (بادام) , Pistachio (پستہ)  : 10X

Raisins (کشمش) : 2 Table Spoon

Cardamom (الائیچی) Powder: 1/2 Tea Spoon

Kewra Essence (کیوڑا خوشبو) : 1/2 Tea Spoon (Optional)

Procedure:

1. Blend the rice, dry fruits and 1/2 cup milk in blender thoroughly.

2. Pour milk & batter in cooking pot and cook on high flame for first boil.

 

3. Add grated carrot and cook for five minutes (almost) on low flame.

 

4. Add sugar and raisins, cook further for desirable consistency on low flame.

 

5. When the batter become thick add kewra essence mix it & off the flame.

 

6. When it became cool dish it out, garnish it as per desire.

 

 

Tip-1: Stir continuously to avoid lumps in milk till it is boiled.

Tip-2: At this carrots are cooked for short time to make them tendered.

Tip-3: For best result cook it on low flame.
