CHANA PULAO
A very simple recipe but delicious one. Let us have a look of its making/preparation or cooking in MHK’s own style. We are going to cook it in easy and quick way to add an interesting main course meal dish:
Ingredients:
Rice (چاول): 1 KG
Boiled Gram (سفید ابلے ہوئے چنے): 2 Cups
Onion (پیاز): 2X Medium Size
Tomato (ٹماٹر)+Green Chili (ہری مرچ) Paste: 3X + 4~5X
Oil (تیل):1 Cup
Lemon (لیموں): 2X
Ginger (ادرک) + Garlic (لہسن) Paste: 2 Table Spoon
Chili Flakes (دڑا مرچ): 1 Table Spoon
Coriander (دھنیا) Powder: 1 Table Spoon
Whole Cumin (ثابت زیرہ): 1 Table Spoon
Cinnamon (دار چینی) : 3~4 Sticks
Black Cardamom (موٹی الائچی) : 2X
Green Cardamom (سبز الائچی) : 3~4X
Star Annis (بادیان): 2X
Black Pepper (کالی مرچ) : 1/2 Tea Spoon
Clove (لونگ) : 5~6X
Turmeric (ہلدی): 1/2 Tea Spoon
Salt (نمک): 1 Table Spoon (or as per taste)
Pulao Cubes: 2X
Bay Leaves (تیز پات): 2~3 X
Procedure:
Step-1: Let the oil get hot first then pour onion and initially fry it on high flame and when it gets transparent turn the flame to medium and fry further to let it brown.
Step-2: Now turn the flame to low and take some quantity of fried onion out for later use.
Step-3: Add whole spices along with 2~3X bay leaves (Taiz Paat), Garlic+Ginger Paste, Tomato+Green Chili Paste, Salt, Turmeric, Chili Flakes one by one & fry further a little by adding some quantity of water.
Step-4: When Masala is ready add Grams (Chanay) in it and cook for five minutes
Step-5: Add 4~5 glass of that water in which Grams were boiled and cook it further till it is boiled
Step-6: Almost after 10 minutes when water start boiling add whole Cumin & Pulao cubes and mix well.
Step-7: Pour soaked rice and let them cook till the water is dried up reasonably then sprinkle lemon juice and semi fried onion over the rice.
Step-8: Now Steam Cook at Medium Flame for 2~3 minutes & for 15~20 minutes at low flame.
Tips:
1. When rice are dipped in water for cooking at that time water level should be 2 inch above from the surface of dipped rice.
2. To check that either rice are steam cook or not, splash some water on the side of pot. If it is evaporated instantly it means rice are ready
3. If steam start coming out from the edge it is also shows that rice are ready.
