Karela Do Payaaza (Bitter Gourd with Onion):
is a main course dish and very much popular in the subcontinent especially in Pakistan, India & Bangladesh. People love to eat it with mince (قیمہ) also but here we are going to display its combination with Onion in a little bit large quantity. There are also many people who don't like it because of bitterness but in this video we are also providing some tips to overcome this issue whereas there are some more tips related with the problems of this dish. It is a very simple (سادہ) and very much easy (آسان) to cook recipe and even can be cooked by anybody after watching this video. Another quality is that both major basic items (i.e Bitter Gourd (کریلا) & Onion (پیاز)) are a natural source of enriched nutrients that are very useful for human health. However it is worth mentioning that use of balanced diet is helpful otherwise its advantages may turn into disadvantages.
Let us have a look on the recipe first:
Ingredients for Making of Karela Do Payaaza:
1. Bitter Guord (کریلا) : 1 Kg
2. Onion (پیاز): 5 (Medium size cut in slices)
3. Tomato (ٹماٹر): 3~4
4. Oil (کھانے کا تیل): 1.5 Cup
5. Cumin (زیرہ)Powder: 1 Table Spoon
6. Garlic (لہسن)Paste : 2 Table Spoon
7. Green Chili (سبز مرچ): 3~4
8. Lemon Juice (لیموں کا رس): 2 Table Spoon
9. Turmeric Powder (ہلدی پائوڈر): 1 Tea Spoon
10. Red Chili (سرخ مرچ پائوڈر): 2 Tea Spoon
11. Salt (نمک): 1 Tea Spoon
12. Coriander (دھنیا)Powder: 1 Table Spoon
Procedure for Making of Karela Do Payyaza:
Step-1: Cut the Bitter Gourd in fine slices, wash them and soak them with salt for overnight. Then wash them thoroughly for cooking
Step-2: Place the pan on low flame and pour 1/2 cup of oil in it. When oil become hot fry slightly the bitter gourd in it and take them out.
Step-3: With the remaining oil, onions are semi fried until their colour turns into transparent. At this stage take out half of the amount of the semi fried onion and further fry the remaining until it turns into the golden brown.
Step-4: Now add Garlic paste and all spices and mix them for a short while. Add tomato and green chili and further steam cook for 5 minutes.
Step-5: Add now the fried bitter gourd at this stage, mix them and further stem cook for 4~5 minutes
Step-6: Onion which was taken out in Step-3 is added at this stage along with remaining green chili, lemon juice, mix the well.
Step-7: In last sprinkle green coriander and mix slightly then without mixing sprinkle the cumin powder and lastly stem cook for 2~3 minutes. Ready to serve now.
