Carrot cake

 

A perfect recipe to make your day refreshing and enjoyable. This recipe is to make super soft and healthy cake besides another useful addition to baking related series recipes of #MHK. Let us see how it is made at home in very simple and quick way without use of many ingredients.

Ingredients:

Granulated Sugar (باریک چینی): 250 Grams (1 Cup)

Cake Flour (میدہ): 250 Grams (1.75 Cup)

Carrot (گاجر): 3~4X (Peeled and grated)

Eggs (انڈے): 3X

Oil (تیل): 1 Cup

Baking Powder (بیکنگ پائوڈر): 1.5 Tea Spoons

Baking Soda (بیکنگ سوڈا): 1 Tea Spoon

Salt (نمک): 1/2 Tea Spoon

Fresh Orange Juice (مالٹے کا رس): 3 Table Spoons

Orange Zest (باریک چھلکا مالٹے کا): 2 Table Spoons

Raisins (کشمش): 2 Table Spoons

Wall Nut (اخروٹ) & Almond (بادام): 2 Table Spoon (Crushed)

Procedure:

1. Transfer all dry ingredients in a bowl and mix them well.

 

2. Prepare any pan by greasing its bottom with oil & laying of butter paper on it.

 

3. Break the eggs in a bowl and mix them slightly with beater.

 

4. Now add sugar gradually in the batter and mix it well.

 

5. The same way add oil and mix it also well till its texture become foamy.

 

6. Add orange juice and beat it again.

 

8. In a separate bowl, add raisins & Dry fruits in 1 table spoon of cake flour, mix well.

 

9. Mix dry ingredients in the batter by cut and fold technique.

 

10. Add grated carrots as well and mix them thoroughly.

 

11. In last mix gently dry fruits, already coated with cake flour, in the batter.

 

12. Transfer the whole batter in already prepared pan.

 

13. Tap the pan and place in pre-heated oven at 170 for baking.

 

14. After 35~40 minutes take the cake out, let it cool for further process.

 

15. In this condition it is ready to be served.

 

16. However we decorate it further for more pleasure.

 

 

Orange zest is made by grating top layer of orange rind.

 

Tip-1: Mix until its colour become whitish & texture fluffy.

Tip-2: In this way dry fruits will dissolve in whole batter rather than accumulating at bottom.

Tip-3: Cleaning of nozzle is also necessary for fine work.
