Overall biryani is a popular main
course meal dish of the sub-continent. People of all categories across the
sub-continent and over the world where said peoples are residing, like this
dish very much.
Chicken biryani is a different style
of biryani and very popular among rice lovers. Cooking of Degi Chicken Biryani is a lille bit of different style different from routine biryani but taste is unique and delicious too.
Let us see its ingredients and procedure that how it is cooked:-
Ingredients:
To Cook Biryani Qorma
1. Chicken (چکن): 3~3.5 Kg
2. Onion: 1 Kg
3. Tomato: 3/4 Kg (750 Grams)
4. Garlic (لہسن)+Ginger(ادرک): 4 Table Spoon
5. Oil: 2 Cups (500ml)
6. Curd/Dahi
(دہی) : 500 Ml/Grams
7. Lemon: (لیموں) 6X
8. Green Chili (سبز دھنیا): 10~12X
9. Coriander Powder(دحنیا پائوڈر): 3 Table Spoon
10. Spice
(گرم مصالحہ) : 1 Table Spoon
11. Red Chili
(سرخ مرچ): 3 Table Spoon
12. Red Chili Flakes
(دڑا مرچ) : 1.5 Table Spoon
13. Turmeric
(ہلدی) : 1 Table Spoon
14. Dry Plum: 8~10X
15. Cumin
(زیرہ): 1.5 Table Spoon
16. Salt (نمک):
2 Table Spoon
17. Bay Leaves
(تیز پات): 5~6X
18. Black Cardamom
(کالی آلائچی) : 4X
19. Green Cardamom
(سبز آلائچی) : 6~7X
20. Cinnamon
(دار چینی) : 6~7X sticks
21. Star Anise
(بادیان کے پھول) : 4~5X
22. Black Pepper (کالی مرچ): 1 Table Spoon
23. Clove
(لونگ) : 10~15X
24. Mace (جاوتری) : 3~4X
(To boil/Cook the Rice)
1. (چاول)1

5. Green Cardamom
(سبز آلائچی) : 5~6
6. Black Cardamom

(دار چینی) : 2~3 sticks
9. Salt
(نمک): 4 Tea Spoon (1 Tea Spoon=250 grams)
10. Star Anise
(بادیان کے پھول) : 2 Flowers

Procedure
---------------------------
Step-1: Pour Oil along with some quantity of Whole Spice and let
it fry a little.
Step-2: Add onion initially on high flame in that mixture and let
it fried till its colour change into brown.
Step-3: Make a smooth mixture of Coriander, Spices, Red Chili,
Chili Flakes, Turmeric, Dry Plum, Cumin in the Curd
Step-4: Take out more than half of brown onion out and with the
remaining oil pour the paste of ginger and garlic and cook for 1~2 minutes.
Step-5: Add salt now, fry a little and then add chicken as well
till its colour change into light brown....
Step-6: Now add tomatoes and steam
cook for 2~3 minutes....
Step-7: When tomatoes become tender
add mixture of curd and fry further.....
Step-8: Add chicken in that mixture and cook further by adding
green chili & Coriander leaves, lemon juice mix well and steam cook for 5
minutes and Qorma for Biryani is ready.
Step-9: For Boling of RICE: place pot on stove and add mint
leaves, whole spice, salt
& Oil (3~4 Table Spoon) in water and let it boil.
Step-10: When rice start boiling add 2 table spoon of white
vinegar, stir a while and strain for further process.
Step-11: Now different layers of ingredients are laid one by one.
Step-12: AT last initially steam cook at medium flame until lid of
the pot become hot than after that 10~15 minutes at low flame
Tips for enhanced cooking:
If
the chicken is cooked in its own water or mixture of curd then it will be
more tasty
Use
of lemon enhance the taste and preserve the breakage of meat.
Use
of green ingredients in reasonable quantity like coriander and mint are
very useful to enhance the taste.
At
bottom layer of oil is effective for avoiding rice stickiness with the
pot.
